Made by a single producer, Josep Cuixart, in Catalonia. The name Neval comes from Catalan for "snowy," referring to the cheese's shape and color, which is similar to the snowy foothills of the Barcelona Mountains. Delicate and rich with a slightly sweet tang. This cheese is made with goat milk or sheep's milk.
