The first Spanish cheese to receive the Denominacio de Origen distinction, Roncal is made using milk from Basque herds whose registries date to the 13th century. It is aged for at least 3 months, resulting in a rich, olivey, nutty flavor. Pair with Navarre reds such as Garnacha or Tempranillo.
